Somehow, it escaped me that there is protein in egg whites. I thought all the protein was in the yoke. My daughter came over the other night and fixed an egg white, 3 eggs, 1 lb. sausage, zucchini, yellow crook-neck squash and leek casserole. The egg whites come in a tall skinny milk carton type container from the dairy case at Publix. I had seen the Egg Beaters but I had never seen the egg whites in a carton before. It was great and was still tasted normal after two days later. All she did was brown the sausage and the chopped leek together and pour it into an glass Pyrex oblong baking dish. Then she stirred all the eggs together and poured it over the meat and then thinly sliced the zucchini and the squash and added it to the mixture. It cooked for 30 min at 350 degrees. For under $10.00 we had a great meal. For about the same price you can add mushrooms, leave off the sausage and have a great vegetarian meal.
